调料:小葱2根,姜1块,蒜1头,生抽2勺,香醋、芝麻油各1勺,白糖1小勺,干辣椒末、花椒油、食用油各适量
五花肉优选五花三层肥瘦相间的;小葱洗净,切成葱段和葱花;姜洗净,切片。
锅中倒入适量水,放入五花肉和葱段、姜片图1,煮至可用筷子轻易戳透捞出,放冰箱冷藏半天后切薄片备用图2,稍冷冻一下切薄片比较方便。黄瓜洗净切丝图3;蒜切末备用。锅中倒入食用油,烧至七成热,淋在干辣椒末上,制成油辣子。

将生抽、香醋、白糖、葱花、蒜末倒入碗中,淋上油辣子、花椒油、芝麻油,搅拌均匀制成料汁图4,至于比例问题,可以按自己口味调整。摆盘时先铺上五花肉片再以黄瓜丝点缀,最后淋上料汁即可。
