采购单 猪前蹄500克
调料 冰糖20克,八角1个,香叶1片,老抽、盐各1勺,小葱2根,姜1块,食用油适量
提到猪蹄,有一半人想到的是胶原蛋白,而另一半人会想到脂肪。但不管是脂肪还是胶原蛋白,都可以润滑皮肤,所以适当吃猪蹄后皮肤变滑并不是错觉。
首选猪前蹄,肉多也比较嫩,后蹄筋多,骨头粗大,处理起来不容易。猪蹄洗净去毛,切块图1;小葱洗净,切段;姜洗净,切片。

锅中倒入少许食用油,再倒入冰糖开小火炒糖色图3,大约30秒,炒至冰糖熔化,糖水变焦糖色即可。切记一定要开小火,不停地翻炒。如果糖色没炒好或者炒煳的话,那就需要重新开始。
